AWARD-WINNING CHEF BRUCE COLE BRINGS SOUTH AFRICAN STYLE TO RETALLACK’S LOOP RESTAURANT
North Cornwall’s Retallack Resort & Spa is delighted to announce the appointment of award-winning South African chef Bruce Cole. Classically-trained with a decade of senior kitchen management experience, Bruce has previously held the executive chef role at Cape Town’s five-star Cape Grace Hotel which was listed, during his time there, as one of the top fifty hotels in the world by Conde Nast Traveller.
A former member and advisor to the South African National Culinary Squad, Bruce has held a number of posts in some of the top hotel restaurants in South Africa and the UK. Passionate about sourcing local produce and working as part of a vibrant fun team, Bruce’s new menu at Retallack’s Loop Restaurant – which overlooks the Retallack FlowRider – is designed to put a modern twist on quality ingredients while showcasing some of the fantastic flavours he is renowned for.
Among the fresh lunchtime and evening delights listed on Retallack’s summer menu there includes Line-Caught Salmon on a Warm Potato Salad, Fowey Mussels in a White Wine Sauce, Wild Mushroom Risotto, Grilled Chicken Breast with Vegetable Stew and Cured Salmon and Citrus Salad. Organic burgers and Cornish steaks also feature, in addition to a range of light homemade sandwich and salad options. Meanwhile, those with a sweet tooth may want to leave room for tempting treats such as Eaton Mess, Chocolate & Earl Grey Mousse, or New York-style Baked Vanilla Cheesecake.
“The menu is all about taking the best local produce and adding a bit of flair and imagination to some of the more traditional recipes,” says Bruce. “Cornwall has exceptional fresh fish and meat so it’s a real joy to be here making the most of it at Retallack’s Loop Restaurant which is an exciting and unique venue with a great team and a fabulous upbeat atmosphere. We’re all dedicated to making sure that when people come here they have an experience that they simply couldn’t get anywhere else and we’re all really looking forward to a busy summer ahead.”
